The Versatility of Coleslaw

Life is busy. With kids, school, work, gym, cleaning and extracurricular activities, cooking usually takes a back seat and we often opt for quick take-away. Once in a while it’s ok but if done regularly, it becomes a burden not only on your health, but on the wallet as well.
 
So often enough, when I know there’s a busy week ahead of me, I often get a bag of ready-made coleslaw. I admit, I’m not a huge fan of cabbage, but because it is a good source of Vitamin C, and the coleslaw bag is available year round at a very reasonable price compared to other ready-made salad options, I can easily whip something up in less than 20 minutes with the basic staple ingredients I often have on hand.
 
The following are three quick and easy recipes to fall back on when life hits the fan. All made using a bag of slaw:
 
 

Apple Coleslaw

 
1 apple, julienne
½ bag of coleslaw
½ cup mayonnaise
1 tsp honey
Salt & pepper to taste
Fresh herbs – coriander, mint, parsley (optional)
 
Mix mayo, honey, spices and herbs
Mix the coleslaw and apple gently
Enjoy immediately, but can be refrigerated for an hour

Breaded Fish/Chicken portion – baked or fried, chopped
Tortilla Wraps
Creamy base – tartar sauce, ranch dressing, tzaziki, mayo, sour cream
Hot sauce (optional)
Dry coleslaw
Salt & pepper to taste
 
Take your creamy base, and mix it with your favourite hot sauce
Spread it on tortilla
Add your breaded meat, chopped
Sprinkle coleslaw generously
Add salt n pepper to taste
Roll up tightly. Enjoy immediately
 
 
 

Fried Rice

2 TBSP oil
2 boneless chicken breasts, sliced in bite-size strips
1 tsp minced ginger
1 tsp minced garlic
½ bag of coleslaw
2 cups of pre-cooked rice
Soy or Teriyaki sauce (to taste)
Salt & pepper (to taste)
Handful of bean sprouts (optional)
 
Heat oil, add your chicken with garlic and ginger and sauté till golden brown on medium-high heat
Add ½ bag of coleslaw and sauté for 1 minute
Mix in your rice
Add soy sauce, salt and pepper to taste
Mix in your bean sprouts, turn heat off, cover for 5 minutes
Enjoy immediately
