World’s Best Tandoori Chicken #recipe plus #win over $100 of @KissanInt products

They say variety is the spice of life. I hear that and think it must be a variety of spices. Growing up as a second generation Canadian in a South Asian home we ate a variety of foods. My mom (may she rest in peace) made sure we had a balanced diet of lentils, vegetables, red meat, chicken and pasta on a rotating schedule. One thing was for certain, we liked our food HOT as in pass me a jug of water kind of hot.

Some things changed as I got older, we started reducing the amount of spice in our food when friends would come over for supper or the kids were little, only to increase the fiery yumminess back over time. 

Having mixed Pakinese kids (half Pakistani, half Guyanese, fully Canadian) meant that it was important to me to introduce them to delicious traditional dishes from their grandparent’s cultures. I also wanted to balance our meal plan with our own favourites dishes (Mexican, Italian, Chinese and Canadian eh?). I’m all about fusion food in my home. If it tastes good, then why not mix it up and discover something new and delicious?

I love cooking with spice, not necessarily heat. It’s important to me that my kids recognize and appreciate different flavours; tolerating the heat is never the focus. When it comes to great quality spices, I turn to Kissan.

One of the first things I learnt how to make was tandoori chicken. It’s as tasty as it is versatile. Fortunately for me and you its also as impressive to serve as it is quick to make. Trust me when I say you cannot go wrong with this recipe.

In the summer I like to marinate the chicken when I buy it from the store/butcher and freeze it. That way I simply thaw and grill. Winner winner chicken dinner.

Four chicken legs/thighs/breasts

5 tablespoons plain yogurt

2 heaping teaspoons of Kissan tandoori masala

2 tablespoons lemon juice

Salt to taste

That’s it that’s all. I am not fooling you here, it really is THAT simple. Mix the ingredients then toss over chicken. I like to slit my chicken pieces so the marinade really seeps right into every nook and cranny. I mix it all in a large plastic freezer bag and throw into the fridge or freezer depending on when I plan to cook it.

Cooking Instructions:

1. Wash chicken pieces thoroughly. If you prefer larger pieces of chicken, cut slits with sharp knife around chicken to allow better marinating.

2. In a large glass or stainless steel mixing bowl, create a marinade by adding Kissan Tandoori Masala, yogurt, salt to taste and lemon juice. Mix thoroughly.

3. Add chicken to marinade, coat chicken with mixture and refrigerate overnight (or at least a few hours).

4. Barbeque or roast in oven at 375 ̊F until chicken is fully cooked.

5. Garnish with sliced onions, fresh coriander and lemon slices.

6. Serve with chutney, naan bread, roti or rice.

I simply cook it on the grill in the summer or place it in a roaster with a tight lid in the winter. The next part is what will take the flavour profile from yum to oh my gosh I cannot stop eating this.

Take a small bowl, finely chop one small/medium onion (red works best but I use yellow if I don’t have any red on hand), finely cube a small tomato and about 1/3 of a bunch of coriander (we love this stuff but you could also use mint if you prefer), then add in 2 tablespoons of lemon juice and salt to taste. Mix it all up and invoke your maximum level of willpower to not eat it all up right then and there. When the chicken is done cooking and still piping hot, pour this mix over top. The tangy desi salsa will absorb into the piping hot chicken flesh in a way that will leave you speechless, clutching your chair and willing your nostrils to keep from touching the food. You can literally eat this entire dish in one sitting (umm….a friend told me) or serve it with rice/salad/naan/a fork.
