Apple Carrot Salad

Growing up, I heard two famous sayings: “An apple a day, keeps the doctor away” and “carrots are good for you – ever seen a rabbit wearing glasses?!”

So why not mix the two and make a nice refreshing side salad?

You will need:

3 medium carrots, peeled and finely julienne
2 medium apples, unpeeled and finely julienne
1 pepper, jalapeno or chilli, finely chopped (optional)
½ lemon, juiced
½ tsp sugar
½ tsp of salt (to taste)
¼ tsp black pepper (to taste)
2 TBSP fresh coriander, finely chopped
2 TBSP fresh mint, finely chopped (optional)

Use your favourite apple or even mix up different kinds. Not only will the salad’s taste change, but the different colours will make it pop. I prefer using royal gala apples, but you can always mix it up using granny smith with golden delicious. The lemon is used to keep the apples from browning, and sugar is added to keep the tartness away. Herbs and s&p (salt and pepper) are used to bind the salad together. Enjoy!
